THE METODO CHARMAT -
This unique and extraordinary quality is also obtained using the Charmat method of sparkling wine production as well as the Metodo Classico.
The blend is obtained by selecting various fresh and fruity wines, which have been divided into groups by different families of selected yeasts. The blend undergoes a second fermentation: this is carried out very slowly, at a low temperature, in small “cuvée close” tanks, where the different, individual yeast aromas are surrendered. The new cuvée is then assembled, drawing on decades of experience of spumante making. The wine undergoes a long ageing process on the less, giving the Cesarini Sforza spumantes a full harmony of aromas and highly individual character.
