THE METODO CHARMAT - "CESARINI
SFORZA"
This
unique and extraordinary quality is also obtained using
the Charmat method of sparkling wine production as well
as the Metodo Classico. The blend is obtained by selecting
various fresh and fruity wines, which have been divided
into groups by different families of selected yeasts. The
blend undergoes a second fermentation: this is carried out
very slowly, at a low temperature, in small cuve close
tanks, where the different, individual yeasts aromas are
surrendered. The new cuvée is then assembled, drawing
on decades of experience of spumante making. The wine undergoes
a long ageing process on the less, giving the Cesarini Sforza
spumantes a full harmony of aromas and highly individual
character.
Charmant - Cuvée Chardonnay marks the birth of an
innovative and exclusive variation of the Charmat Method
of sparkling wine production. The Charmant Cuvée
method is characterised by the special management of the
vines and selection of grapes, technical innovations during
the process of the first fermentation, new developments
in the spumante-making phase, an innovative formulation
of the liqueur, and a dosage which makes the foam particularly
creamy and silky in the mouth.
