From a dream to a project ... from a project to reality!
On Friday, 2nd September, at the Cesarini Sforza Spumanti cellars, there was the official presentation of TRIDENTUM, the new Trento DOC Metodo Classico spumante made by this renowned winemaker. On Tuesday, 20th September, Tridentum was presented to the media, at the Teatro Nuovo in Milan.
The name, with its historical connections, immediately recalls the region where the grapes are harvested, with its absolute quality spumante-making vocation.
TRIDENTUM is a top of the range product by Cesarini Sforza, because the grapes come exclusively from the traditional Chardonnay area of Trentino, as identified by the “Zoning” project developed by the Cantina La Vis e Valle di Cembra, with the scientific support of the renowned Istituto Agrario (Agricultural Institute) of San Michele all’Adige; the vineyards are situated at between 350 and 650 metres a.s.l., in an ideal position to produce exceptionally fresh, elegant and scented spumanti.
TRIDENTUM is made from Chardonnay and Pinot Nero grapes from the Masi di Pressano and Valle di Cembra areas. Quality is preferred to quantity; the aromatic notes of the grapes are intenser and more complex, due to the considerable temperature excursions. The wine is aged on its yeast lees for 36 to 48 months.
