The
hand-picked grapes are collected in large baskets and taken
to the Cantina La Vis winery where the clusters are immediately
pressed under the supervision of Cesarini Sforza technicians
and according to spumante base wine classical pressing procedures.
Only the first pressing is transferred on the same day to
the Cantina Cesarini Sforza winery for vinification.
The
primary fermentation of the base must over selected yeasts,
conducted at controlled temperature in steel vats and partly
in French oak casks, allow to achieve the spumante base
wine that will ensure the desired features for the various
cuvées.
